"real" good tacos

So as you guys have heard, someone is trying to sue taco bell for not having "real beef." First off, this isn't new news that taco bells beef sucks. This goes to the point that fast food sucks. If you want something worth eating obviously you aren't going to find it at taco bell in the first place.

Leave them be, they are doing their thing, you do yours.

So anyways, for those looking for a decent simple, "authentic" taco to make at home, its so simple.


1ea       white onion, small dice
1ea       cilantro bunch, chopped
1pckg   tortillas, corn
1lb        steak, cubed
totaste   salt/pepper/jalepeno

When picking out your steak, get beef obviously. Also getting something that is going to be tender with a short cooking time. Don't pick stew meat. I would pick a ribeye, or a strip. You can go with a tenderloin (filet mignon) but thats $$.

Now that you have your beef, trim it up. If there are large sections of fat, or cartilage, cut it off and toss it. You DO NOT want to chew on that. These sorts of things are probably in ground beef, yuck. After the quick trim, cube it up in to small pieces. You want to make sure that these are smaller than bite size. maybe 1/4in cube, or slightly bigger.

Get a pan on your flame and get it hot! Put in enough oil to just barely cover the bottom. Add your meat in one even layer, no stacking! Work in batches if needed, and be careful when adding your meat. If you throw your meat into the hot oil, you'll learn why you don't throw things in to hot oil. Carefully put this meat in the oil, making sure not to splash yourself.

Don't touch your meat for 2-3 minutes. It needs a good color on it before you touch it, you only get one chance. To get your away from your meat, now is a great time to mix your onions and cilantro. This is a classic topping for tacos. Mixed your chopped onion and cilantro and season with salt. To add an extra something special ( i call it love ) add the juice of a lime, or to your tasting. You can add jalapeno for spice.

Now is the time to move the beef! Take a wooden spoon, or spatula and move the meat around, don't burn it! Give it a chance to sit and get happy in the pan. Chances are, a lot of liquid has been released and it seems like its steaming, despite the fact your flame is up all the way. That is unavoidable at home! This will just help it cook through. (still want to look for medium rare cook on your meat for this taco).

 Now to distract you again from your meat, so that it can cook, we have to prep the tortillas. Corn is a must. I'm sorry but flour, just doesn't cut it for me. If you have a griddle or a flat top thats perfect for these. Turn that baby on, and toast these on there jsut like you would toast a piece of bread. once toasted these guys can fold for tacos. untoasted, these guys will flake apart and break. If you dont have a griddle, cut a whole in the back and nuke them in 3-4 piece batches. This should make them able to fold. Now don't forget about that meat!

By this point, meat is cooked, onions and cilantro is ready, tortillas are ready! Do you hear that? Your tortillas are saying "fill mee!! with 100% BEEF"

Top these babys with your favorite hot sauce. And you a simple authentic taco! Move over taco bell!
